From Wells to World-Class Pork – A Legacy of Innovation on the Farm

Our farm's roots stretch back to 1855, when Christian Fischer—a German immigrant and well driller—received farmland in Waseca, Minnesota as partial payment for digging the town’s first two wells. From this humble beginning, our family has cultivated the land for five generations, growing with the seasons and evolving to meet the times.

A Tradition of Excellence

What began with sows, cows, sheep, goats, chickens, and horses soon found its stride. In the early 20th century, we became one of America’s top breeders of Percheron horses. By the 1960s, we began a new chapter—focusing on high-quality pork production.

As a teenager, Tim Fischer continued that legacy with grit and ambition: baling hay, breeding gilts, and selling purebred boars by age 13—his dad often chauffeuring him to sales. Over time, Tim expanded the operation to more than 400 boars annually and milked 35 cows until 1997. But the real transformation came with pork.

Today, we raise a heritage-inspired blend of Berkshire, Duroc, Hampshire, and Yorkshire hogs—valued for their rich marbling and deep flavor. We never use growth stimulants. Instead, we let nature take its time—extending the growth cycle by about two months to deliver pork that’s noticeably better.

After the hog market collapse of 1998, we shifted away from commodity sales and began working directly with chefs in 2002. That decision changed everything.

We now supply over 80 restaurants, including Target HQ, six Minnesota colleges, and grandstand performers at the State Fair. Our pork has earned a spot on the plates of celebrity clients, and in celebrated kitchens such as Heather’s in South Minneapolis—famous for serving “the best bacon.”

We maintain a herd of 110 sows, focused solely on producing top-tier, specialty pork. What hasn’t changed in five generations is our commitment to quality, our love for the land, and our belief that great food starts with great farming.
